There are so many reasons to love summer. The days get longer, outdoor meals happen more often, and our vegetable gardens are plentiful. We make the most of the season by preparing fresh and colourful dishes. In this same vein, our summer issue is focusing on the abundance of fresh produce and the joy of eating well.   • RESTAURANT-INSPIRED COD DISH This fish dish was recently added to our Café RICARDO menu and has become an instant favourite. Two beautiful cod fillets are served on a green pea soup garnished with bacon, and cucumber ribbons with herbs add a touch of freshness. It’s easy to make and looks great!
  • DRINK THIS: RASPBERRY AND ROSE MIMOSA Mimosas are a brunchtime staple. This version with raspberries is fruity and vibrant, and its punchy hue will be a surefire hit. The raspberry and rose syrup, combined with raspberry liqueur and bubbly, makes for a fresh tipple that’s tops.
